Today I am sharing a variation of my favorite go to meals, veggie saute. It's easy, healthy, fast, and exceptionally versatile.
Serves: 2 entrees, or 4 sides
Prep. & Cook Time: Approximately 20 min.
Ingredients:
- 1 Medium Sweet Potato
- 1/4 Red Bell Pepper
- 1 Small Yellow Squash
- 1 Small White Onion
- 5 - 6 White Mushrooms
- 7 - 8 Okra
- 1 Medium Tomato
- Olive Oil
Prep:
- Cover the bottom of a large skillet or Dutch oven with olive oil.
- Pre-heat on med-high heat.
- While the pan is heating up, peel and dice the sweet potato, onion, and bell pepper.
- Put the first three ingredients in the pan. While they cook, slice the squash and okra. I slice the squash fairly thin but cut the okra into fairly large pieces.
- Turn the vegetables in the pan, and add the squash and okra.
- Slice the tomato and mushrooms.
- Once everything looks like it is close to being tender, add the mushrooms and tomato.
- Continue cooking for about 5 - 10 more minutes.
- Remove from heat and let sit for about 5 more minutes.
- Enjoy!
