Food Friday! Veggie Saute








Today I am sharing a variation of my favorite go to meals, veggie saute.  It's easy, healthy, fast, and exceptionally versatile.









Serves: 2  entrees, or 4 sides

Prep. & Cook Time: Approximately 20 min.

Ingredients:


  • 1 Medium Sweet Potato
  • 1/4 Red Bell Pepper
  • 1 Small Yellow Squash
  • 1 Small White Onion
  • 5 - 6 White Mushrooms
  • 7 - 8 Okra
  • 1 Medium Tomato 
  • Olive Oil



Prep:


  1. Cover the bottom of a large skillet or Dutch oven with olive oil. 
  2. Pre-heat on med-high heat.
  3. While the pan is heating up, peel and dice the sweet potato, onion, and bell pepper.
  4. Put the first three ingredients in the pan.  While they cook, slice the squash and okra.  I slice the squash fairly thin but cut the okra into fairly large pieces.
  5. Turn the vegetables in the pan, and add the squash and okra.
  6. Slice the tomato and mushrooms.
  7. Once everything looks like it is close to being tender, add the mushrooms and tomato.
  8. Continue cooking for about 5 - 10 more minutes. 
  9. Remove from heat and let sit for about 5 more minutes.
  10. Enjoy!

I am always trying to figure out fast, easy, and healthy recipes.  This one is great, so I thought that I would share it.  Sweet Potatoes, collard greens, and red onions work really well together.  You can substitute any green, such as kale or spinach.  Eat this alone, or with a grain of your choice.  This time, I made it with couscous.









Ingredients:


  • 2 medium to large sweet potatoes
  • 1 bunch of greens
  • 1 red onion
  • 2-3 tbsp olive or coconut oil
  • 1 cup couscous
  • 11/2 cups of water or broth



Preparation:


  1. Add your water or broth to a small sauce pan, and bring to a boil.
  2. Pour the couscous into the boiling liquid. 
  3. Turn down to low, cover and let simmer for five minutes.
  4. Remove from heat, fluff with a fork, and set aside.
While this is going on, you will also want to:


  1. Peel the potatoes, and cut into cubes.  Wash and tear the greens into 1 - 2 inch pieces.  Chop up the onion.
  2. Heat the oil up in a large skillet or dutch oven over medium heat.
  3. Add the potatoes and onions. Cover and let them cook for a few minutes, then turn them and cook about a min longer.
  4. Add your greens!
  5. Cover and cook until they start to wilt.
  6. Turn everything again, and cook a bit longer with the cover off.



Done!

Depending on how much time I have, I will add different herbs and spices.  This is very versatile, low sodium, and vegan.  Let me know how it works out for you.  What different variations can you think to try?
